This dish comes together quickly so it is perfect for a busy weeknight. It is especially good because it can be cooked in one pot making clean up very easy. I always have the problem that I love to cook but I hate to wash dishes, so I am always on the lookout for recipes that don't require many. This also did not require many ingredients, and I had most of them on hand.

Packed with fiber and protein, this meal kept me satisfied for a while. I ate it as is, but I'm sure a salad on the side would be a nice addition to keep you fuller longer.
Brown Rice with Chicken and Broccoli
Makes 4 servings, serving size about 1 1/2 cups
Ingredients:
3 1/2 cups fat free, reduced sodium chicken broth
1/2 cup diced onion
2 teaspoons minced garlic
8 oz boneless, skinless chicken breast, cut into uniform sized cubes
1 cup long grain brown rice
3 cups broccoli florets
1/2 teaspoon ground thyme
1/4 cup toasted pine nuts
Instructions
1. Simmer 1/2 cup broth in a large, deep sided skillet; add onion and garlic and simmer until tender, about 6 minutes; add in chicken, rice and the rest of the broth; cover and simmer for 30 minutes.
2. Stir in the broccoli and thyme and simmer for 15 minutes more; add in pine nuts and fluff with a fork.
