Who doesn't like a grilled cheese sandwich? However, grilled cheese if often known for being a very bad for you. This sandwich is significantly lightened up and the onions and hame make it a little more grown up. The result is a slightly sweet, but very tasty, lunch. This sandwich would go great with a salad and some fresh fruit.

Makes 4 servings, serving size 1 sandwich
Ingredients:
4 teaspoons spicy brown mustard
2 teaspoons honey
1/4 teaspoon sugar
1/8 teaspoon salt
8 slices light bread (I used Pepperidge Farm Light Style 7 Grain)
1 medium onion, thinly sliced
4 slices reduced-fat Swiss cheese
8 ounces light ham
Instructions:
1. Stir together the mustard and honey in a small bowl and set aside.
2. Spray a skillet with cooking spray and add the onion, salt and sugar. Cook until the onion is slightly browned.
3. To assemble the sandwiches, spread one bread slice with 1/4 of the mustard and honey mixture. Next layer on the ham followed by the onion and cheese.
4. Spray each side of the sandwiches with cooking spray and place into a large skillet. Cook, flipping occasionally, until the cheese is melted and the sandwich is heated through.
