Ginger-Lime Sesame Chicken
This was a kitchen experiment that went surprisingly well. I always liked the combination of ginger and lime, and decided to throw in some sesame seeds just for good measure. The result was the slightly tart taste of the lime and ginger mixed with the crunch of the sesame seeds. Delicious.
I served this recipe with a simple side of green beans and almonds, but anything will pair well with it.
Ginger-Lime Sesame Chicken
Makes 4 servings, serving size one piece of chicken
Ingredients:
4 thin sliced chicken breasts (about 1.2 lbs)
1 teaspoon ground ginger
Juice of one lime
3 tablespoons panko bread crumbs
1.5 teaspoons sesame seeds
Salt and pepper to taste
Instructions:
1. Preheat the oven to 325 degrees
2. Season both sides of the chicken with salt, pepper and ginger
3. Pour the lime juice over both sides of the chicken
3. Combine the panko and sesame seeds in a bowl and dredge the chicken through it
4. Bake the chicken in the oven for about 25 minutes or until cooked through, turning it about half way through baking
